Tøndermarsken

Tøndermarsken is Denmark's largest marsh area. The marsh is a distinctive landscape created by the sea and shaped by man. In Tøndermarsken's towns and landscape, you can experience a rich building culture surrounded by magnificent nature, which houses some of Europe's most important bird sites. Therefore, part of the Tønder Marsh is part of the Wadden Sea National Park and the outer part has the status of a UNESCO World Heritage Site.

Hills

Hills are located on a hill island at the edge of the marsh behind the outer dikes. From here you can look out into the humid low-lying marsh to the south and west. The town originated in the Middle Ages and served early as a port of call for merchant ships and oyster boats. In 1736, Højer had grown so large that it gained the status of a split, ie. an urban community where crafts and crafts had to be traded and operated. Højer is one of the increasingly rare examples in Denmark, where farms and townhouses are still seen side by side. The city center consists of narrow streets and squares in a varied course, where well-preserved buildings built in traditional building style with characteristic features form a vibrant cultural environment. Højer is rich in architectural cultural heritage, and the city center contains one of the country's highest concentrations of listed and worthy of preservation buildings.

Højergård

In the middle of the town square, Realdania By & Byg has transformed two historic houses as well as a barn building into a food camp school. With the project Marskgården in Højer, the aim has been to preserve the valuable site-based building culture, while at the same time the buildings have been brought to life and given new content and a modern use. Højergård is a classic marsh farm in West Schleswig building style and is built as a longhouse. The building has previously been part of a larger courtyard with several buildings and has for a period been four-story. Today, Højergård consists of the farmhouse from 1823, an older barn from the 18th century to the east, a villa from 1906 to the north and a new one from 2019 to the west. The four buildings are located on a 3721 m2 plot with i.a. garden and courtyard.

Pacific oysters

Since the Middle Ages, oysters have been scraped in the Wadden Sea. From 1759, they were packed and stored in the oyster warehouse at Kiers Gård in Højer before shipment, among other things. to the Russian court. In recent years, Pacific oysters have formed new banks in the Wadden Sea. Experienced guides take us out to the oyster banks at low tide, where we collect all the oysters we can eat and take home. At the beach meadow, we collect herbs that can be included in the meal, which we prepare at home in the kitchen.

Raises Sausages

Everywhere in Denmark you know Sønderjyske butcher products and sausages, because Sønderjysk butcher craftsmanship is equal to quality. Many recipes have been passed down through generations and have roots in Germany, where special rules for purity and the content of meat have been in place for centuries. This also applies to Højer Pølser from 1897, which has been owned by the same family for four generations and probably Denmark's most award-winning butcher craftsmen. The company has won over 300 medals at competitions at home and abroad and received an honorary diploma from the Danish Academy of Gastronomy. We go to the kitchen with the butchers and learn to make sausages with the original ingredients from Højer Pølser.

Visit on your own some of the approx. 10 active artists and artisans in Højer. It is also possible to hike part of the Marskstien, which goes through Højer. The border town of Rudbøl and the royal town of Møgeltønder are both a short drive away.

Make your own original Højer SausagesGuests have the opportunity to make their own sausages with the original ingredients from Højer Pølser. The sausages are part of a meal that the guests prepare in Højergård's kitchen. The event is adapted for vegetarians.

Herbs sank in TøndermarskenA local herbal guide takes guests out into nature to find and taste herbs. The herbs are used later in the meal, which the guests prepare themselves.

 Black sun with guideIn March and April, the phenomenon of black sun can be experienced together with local experienced guides, who will take you out to the areas in the marsh where the starlings gather in 100,000 thousands before they go to rest for the night.

Sink oysters at low tideLocal experienced guides take guests out to the oyster banks at low tide, where we collect all the oysters we can eat and take home.
